fish and wine is a seafood and wine bar,
with an emphasis on quality and freshness.
Located across from beautiful Greenmount beach in Coolangatta, it has a
relaxed and casual beach feel, while still maintaining a professional
approach.
Outside, take in the views and sea
breezes whilst sitting at one of the high wooden bench tables in the large
alfresco dining area.
Or relax inside with a glass of
wine at the bar , while taking in the impressive wine cellar feature
on the wall.
The food menu consists of fresh
seafood's cooked in simple styles without overpowering the dish with too
many flavors. Pacific & rock oysters, soft shell and sand crabs, prawns,
calamari, an array of fish selections that can be grilled, fried, pan
roasted or oven baked , just to name a few.
Non seafood eaters are also
accommodated, with choices such as chargrilled wagyu rump, marinated
spatchcock, or roasted pork belly.
Daily specials are also featured,
along with a bar menu and a selection of tempting desserts.
Fish & wines signature dish of
authentic 'fish & chips' made with real hand cut chips will be guaranteed
to keep you coming back.
The extensive wine list
incorporates a quality selection of local and imported wines, chosen to
compliment the predominantly seafood dishes on offer and the sub tropical
climate that is found in the south east Queensland region.
Fish & wine is open from 11am 7
days a week for lunch, dinner, or anything 'in-between'.
The proprietors of fish and wine
are Dean and Jo Sammut, who have recently moved up to the gold coast from
Canberra where they ran a successful restaurant named Artespresso for 5
years, which picked up a Sydney Morning Herald chef's hat award 5 years
running during their ownership . Prior to this they grew up in Sydney
where they both forged out careers in the hospitality industry upon
completing their schooling.
Dean has had extensive experience
working as a chef in various kitchens both in Sydney and Europe, starting
at the famed 'Kables Restaurant' in the Regent hotel for his apprenticeship,
going on to work at 'le Gavroche' in London with the roux brothers, before
heading home to work with the beach road group at palm beach and arena at
fox studios. Dean also completed a number of years working under the guise
of David Thompson, Australia's leading Thai food chef, at Darley street
Thai in Kings Cross.
Jo started her training in various
5 star international hotels, including the Marriott and Ritz Carlton
mainly working in the food and beverage departments. Following this
she worked at a number of Sydney cafes and restaurants including Zigolinis
in Double Bay and MG Garage in Surry Hills. Having also supervised in bars
and hotels including the Civic Hotel, Jo has a lot of 'front of house'
experience under her belt.
Fish & wine's head chef, Shane
Felton has also recently made the move from Canberra, where he was Dean's
sous chef at Artespresso. Having extensive years of experience working in
kitchens around Australia, namely Starfish in Batemans Bay, and Peppermint
Bay in Tasmania , Shane has a a great passion for seafood and is in his
element when he is behind the stoves cooking and running the kitchen.
